I hope everyone had a great Christmas! Here is a great recipe that I would like to share with my green chile lovers. This is my go to dish when I have to go to a dinner party. It is easy to prep, it is inexpensive and tastes great! I absolutely love potatoes, green chile and cheese so why not mix them all in one dish! During the holidays I really miss New Mexican home cooking so I try and recreate my favorite dishes where ever I am. Here are the ingredients you will need:
Original recipe makes 1 - 3 quart casserole
1. 2 lb bag of hashbrowns or fresh potatoes peeled and diced
2. 1/2 cup chopped white onion
3. 2 cups of shredded cheese
4. 8oz sour cream
5. 3/4 cup melted butter
6. 1 cup New Mexican Green Chile
7. 10.75oz cream of chicken
8. Salt and pepper to taste
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.
- Bake covered in preheated oven for 40 minutes.
- My new way to cook this dish...I have been cooking it on the grill for about 30min. Taste test to make sure potatoes are cooked all the way through.
